MICHEL BRAS Toya・Japon (French Restaurant) | The Windsor Hotel TOYA

"MICHEL BRAS Toya・Japon" at the Windsor Hotel TOYA is a three-star restaurant recognized by the Michelin Red Guide as the highest authority in French cuisine and Chef Bras's only restaurant outside of France.

Today we are at the Windsor Hotel TOYA.

The hotel has 12 restaurants, among which we chose the MICHEL BRAS Toya Japon - a branch shop of three-star restaurant Michel Bras - tonight.

The restaurant is on the 11th floor and

You can enjoy the nice view of Lake Toya like this↓ I believe this is one of the perfect locations to enjoy dinner in Hokkaido.

We ordered full-course dinner named "Escape & land".

Look at the restaurant logo on the knife! So fashionable!

This is the first surprise starter!

And they are the second surprise starters! The flowers were so beautiful and the seafood is very fresh! We really enjoyed the course from square one!!

The butter also has the restaurant mark!

Let me show you the today's course!!! You must envy me!!!

■a surprise;
stuffed tomato with eggplant,
garlic & red shiso flavor.
ice plant prepared like vegetable

This is very cute! We appreciated not only eating but also seeing the dish!

■return to Sapporo market;
the Japanese flying squid stuffed with:
rice, pepper, crabs, spinach,
some basils, cuttlefish ink jus.

All of the ingredients are of course from Hokkaido!

■in a same spirit of mariniere:
a filet of salmon steamed,
clam's, Vietnamese coriander, nasturtium

We've never eat such delicious salmon like this!!!

■strong & tender
a piece of Kimobetsu pork;
Arabica flavor,
celeriac, chicory, valerian.

The pork loin was cooked under lower pressure and very tender!!!!

But don't forget the rib part, too! It was very delicious!!!

■cheese from France & Hokkaido

I chose all kinds of French cheese including the king of cheese and my tour guest chose all kinds of Hokkaido cheese!

As we had two surprise starters today, we expected a surprise "ender" :-) Hahahaha!!!

■the original coulant from 81;
chocolate biscuit, chocolate coulant R,
calamintha grandiflora ice-cream and caramel-cocoa.

I love this chocolate fountain!!!

■small sweets
They are so cute! I especially like this milk caramel!

■milk liqueur.....

with my favorite herb tea!!

We really enjoyed the dinner, and I was so happy to get this souvenir from the restaurant!

 On the first floor of the hotel, there is the tenant of this restaurant.

I bought "grandiflora honey"!

It IS expensive, but you can see Lake Toya from your seat, and the atmosphere is relaxing♪
I don't have to mention about the meal! I really recommend it :-)

Hokkaido and the french chief ! I think that it's a kind of paradise...nature and cooking in the same place !

Actually, I don't know the price, but it is around 20,000 to 30,000 yen!
The scenery from the restaurant is also perfect! I really recommend this French restaurant ♪
